This is an age old debate, should organic carrots be orange or purple? As many of you may know all carrots used to be purple in colour. That was until the late 16th century when the Dutch growers are thought to of mixed the normal purple carrots with mutant yellow and white carrots. The yellow and white 'mutant' carrots were not rare at the time, just not harvested as they did not contain the anthocyanins that the purple carrots did.
